Hi guys... I've decided to do this anyway for those that want it. Basically I'm creating an updated emergency contact list for the people that actually participate on rides with us.
I will be using some of the information we already had from about 8 months ago, but its pretty outdated. So if you want to be on the list, please PM me your info.
The stuff I am collecting is as follows....

Email
Home Phone
Cell Phone (Highly encouraged)
City
Emergency Contact 1
Emergency Contact 2
Blood Type
Allergies to medication
Preexisting medical conditions (heart attacks, diabetes,etc... anything you think should be known by a first responder)
Feel free to provide as much or as little as you want... If you have any suggestions for other information post here. This will be going into a spreadsheet which I will be continually updating. I will then print copies for those that want them (ride leaders etc).
This could be a potentially life saving device. And as Jeff mentioned, it doubles as a contact list in the event of a flat, mechanical troubles, to say you're going to be late to the meet location, and so on.
